Major comfort food
Like so many others, I grew up on many versions of Italian-American food. Pasta is one of the most common, and my favorites were often the stuffed kinds, oozing with cheese and dripping with delicious marinara. In my opinion, manicotti is the best of them.
As an adult, I’ve discovered an even better way to make this classic dish. Instead of the dried pasta tubes, this recipe uses delicate crepes rolled up with homemade ricotta, mozzarella, parmesan, and spinach, and topped with a delightful homemade marinara. Once you have manicotti this way, you’ll have a hard time going back to anything else.
