Marinara Sauce

Watch the whole marinara come together: grated onion, bloomed oregano and garlic, then a long, lazy simmer.

A classic sauce, made simple.

There are so many ways to make a marinara. You can make it different textures, more or less spicy, extra garlicky, and so on. The common thread is the versatility of the finished sauce for what you can use it in.

This recipe is a simple, deeply delicious one. Tomatoes shine, along with a good amount of garlic and fresh basil. What I avoid here is any added sugar. With a little time, you can mellow the acidity of the tomatoes; this is why so many recipes (and especially the jarred sauces) lean on sugar to balance out the acidity.

Use it along with some homemade ricotta
