Making your own cheese seems complicated. And sure, there are many types of cheese that would be difficult, or even impossible, to make in the average home kitchen. Ricotta is not one of those cheeses.

Take four humble ingredients — whole milk, heavy cream, vinegar, and salt — and in about 45 minutes you have fresh, creamy ricotta cheese that’s ready to be used in all sorts of recipes (like lobster ravioli). Besides being way easier than you think, it’s also just really fun to make your own cheese in the comfort of your own kitchen.
