Pork Carnitas Tacos with Homemade Corn Tortillas

Crispy, juicy pork shoulder gets piled high on homemade corn tortillas and fresh pico de gallo.

The Best Kind of Taco (in my opinion)

I love tacos. Whether “gringo” or street style, filled with meat and/or seafood, I’m always down for a taco. But my favorite filling has been and always will be pork carnitas. The combination of tender, juicy meat on the inside with a just-crisp-enough exterior is unmatched.

Typically this filling is topped with a cilantro and onion relish, but I like to add in chopped tomato, jalapeño, and serrano to turn it into pico de gallo. Finally, fresh corn tortillas send this dish over the top. It’s a process, but if you’ve only ever had store-bought then making them yourself will open your eyes.

The easiest part about this is the pork itself. I pull meat and fat from my Instant Pot Pulled Pork recipe (sans barbecue sauce) and fry it up in a skillet, making this ideal for a weeknight.
